Pumpkin Bread

At least that’s what I tell people it is—pumpkin bread. No pumpkin at all. Just like that pumpkin latte you’re drinking—there’s no pumpkin in there. You knew that, right?

My “pumpkin” bread is made with butternut squash. So is my pumpkin pie. And any other “pumpkin” thing I bake. Oh, wait … did you think I opened a can of Libby’s pumpkin puree and just slid that muck right into my recipe? No no no … that’ not how I roll. Nope. You’re more than welcome to, of course—I have nothing against it. But slicing, peeling, boiling and pureeing a butternut is no big deal for me and I don’t mind doing it to produce my squashy puree. After all, it’s a lot easier to do that with a butternut than with a pumpkin.

Hence why I use butternut.

Back to the pumpkin bread. The recipe is from my all-time favorite generalist baking book—The Fannie Farmer Baking Book. It’s got it all in there. I just randomly opened a page and found a Floreine Hudspeth’s Hoosier Cake. Who knew? Fannie knew. You want a fruitcake recipe, she has four. And her pumpkin pie? It has a shot of bourbon. That’s why I love Fannie.

And the pumpkin bread? Moist. Delicious. And very “pumpkiny.”

makes two 9x5x3 in loaves

Ingredients
3 1/2 cups flour
2 tsp baking soda
1/2 tsp baking powder
1 1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
2/3 cup vegetable shortening
2 cups mashed or pureed pumpkin (or butternut squash)
4 eggs, slightly beaten
2 2/3 cups sugar
2/3 cup milk
1 cup chopped walnuts

1. Preheat oven to 350F and grease and generously flour the two loaf pans. Set aside.
2. Combine the dry ingredients (flour baking soda and powder, salt and spices) in a medium bowl and stir until evenly mixed. In a bowl of a mixer (or a large bowl) combine the shortening, squash puree, eggs, milk and walnuts. Add the bowl of dry ingredients slowly to the wet ingredients and mix (or stir with a big wooden spoon) until the batter is just blended together. Make sure there are not floury lumps! Bits of shortening are ok.
NOTE: Know how when you make quick breads like this and the nuts or raisins always kinda sink to the bottom part of the bread? Try coating the nuts or raisins with a bit of flour first. It helps them not sink so much. Give it a try and let me know if it works for you.
4. Divide batter equally between the two pans. Bake for about an hour, or until a wooden skewer or toothpick comes out clean after inserting into the center of the loaf. Let cool on a wire rack for 5 min. then turn out of pans.

This bread freezes well, so stick that second loaf in the deep freeze for later. Or use it as a hostess gift. And the butternut squash bit? They’ll never know.

Buttermilk-Caramelized Onion Pull-Apart Rolls

Since moving into our new house three months ago I have had a love-hate relationship with our oven. It’s a GE Profile Advantium—and it’s a convection oven. Not the typical convection, either. It’s one of those fancy convection ovens—the kind that can also be a microwave, a proofing space for dough, and a toaster. The interior is about the size of a toaster, too. I can list the issues I am having with it—such as the fact that the constantly turning carousel means I can’t use my half-sheet baking pans, or that the oven maxes out at 450F—but I’m going to stop there for now.

Let me hold off on the hate and talk about the love. The love part comes in the baking. The whole convection process, the constantly turning carousel—it makes for a nicely finished baked product. Pies, cookies, breads, rolls—they’ve never been better, quite honestly. And that’s why I haven’t thrown the oven out of our new triple-paned, German-engineered, energy-efficient windows.

My latest baking success is a recipe I spied in a Martha Stewart Living magazine about seven years ago—Buttermilk-Caramelized Onion Pull-Apart Rolls. I made them once, taped the recipe into my little book of “must keep these” recipes, and never made them again until last week. Oh boy, they’re good.

A few notes: There is yeast involved, but don’t let it scare you; you might want to cut down the amount of onions a bit.

Ingredients
11 tbs unsalted butter, softened, plus 3 tbs melted
1/4 oz. active dry yeast
1 tbs sugar
2 tbs warm water, about 105F
3/4 cup buttermilk
1 large egg, slightly beaten
2 3/4 cups all-purpose flour
2 tsp salt
2 lbs (or slightly less) sweet onions, thinly sliced

1. Directions say to butter a 9-inch cake pan with about 1 tbs of the butter. I used a 9-inch pie plate – two, actually – but use anything you think will hold the rounds of dough. Also butter a large bowl and set that aside.
2. Combine the yeast, sugar and water in a small bowl and let it sit a bit while it becomes foamy, about 5 min. Give it a good stir to dissolve. Add in the buttermilk and egg.
3. While the yeast mixture is sitting, combine flour and 1 1/2 tsp salt in the bowl of an electric mixer using a dough hook. It’ll form a well naturally. Pour the buttermilk-yeast mixture into that well and mix to combine – you may need to stop it and scrape the sides down. Add in 6 tbs softened butter (I’ve added non-softened butter and it was fine). Mix on medium speed for 10 minutes. A soft, sticky dough will form.
4. Scrape the dough onto a lightly floured surface, then sprinkle a bit more flour on top of the top and get a bunch on your hands, too. Knead the dough for about 5 minutes—gently. It’s gonna stick to your fingers if you knead too vigorously, so be gentle and flour your fingers often. The dough will begin to feel seductively soft and light—it’s the best part of the job. After 5 minutes, place the dough in the buttered bowl. Cover with a kitchen towel and let it rise in a warm place for about an hour, or until it’s roughly doubled in bulk. If it doesn’t exactly double, that’s ok.
5. The recipe says to caramelize onions in 4 tbs butter, but I use olive oil to do the job. Heat the oil or butter in a large pan over medium-high. Add the onions, sprinkle in a bit of salt (I would add 1 tsp) and stir to coat—grabbing the onions with tongs and flipping them over as you would a steak on the grill is the best way I have found to do this. Do this intermittently for 5 minutes, until the onions start to look translucent, then turn heat way down to medium low, and let them cook, stirring occasionally, for about 20-30 minutes until they are golden brown. Take off heat. If I were you, I would put them in a sieve over a bowl and let the onions drip off their liquid.
5. Meanwhile, the dough…punch it down and turn it out onto a lightly floured surface again—make sure you have plenty of room. Use a rolling pin to form a dough rectangle about 17 in x 10 in. NOTE: the important thing here isn’t the dimensions, it’s keeping the dough relatively of even thickness throughout. Brush the rectangle with 3 tbs melted butter and spread those caramelized onions evenly over the surface. Starting from the long side, roll the dough into a log and press the seam to seal it.

6. Next, cut the log into about 12 even segments. It’s harder than you think, because you’ll squish the roll into ovals—kinda scary. And then the onions pop out of the ends a bit. Don’t worry about it – it’s gonna happen. Just slice and don’t worry. Put these slices cut-size up in the buttered pan. Directions say to brush with another 2 tbs of melted butter, but really, there’s no need for that unless you want them to look browned. Cover the slices with plastic wrap and let them rise in a warm space for about 50 minutes.
7. Preheat oven to 375F. Bake the rolls for until they are golden. 35 minutes is perfect. Invert the pan onto a cooling rack and unmold the rolls. Serve warm.

I made these to serve with a bean stew, and pulling apart the rolls and dunking bits into the stew was awesome. The onions make the roll moist, which is super. I’ve since made these rolls and spread the dough not with onions but with roasted garlic and rosemary. These weren’t as moist but just as tasty, and you could really get a sense of the roll’s airy texture. This recipe is certainly not disappearing for another seven years.

Salad on a Pizza

Indecision can be crippling. Seriously crippling. Should I wear the green coat or the black leather? Should I dodge this person on the left or right? Should I sit here or there? Soon enough you find yourself standing in the produce aisle for 15 minutes, not sure which head of broccoli is the one destined for your dinner table.

Don’t think it hasn’t happened to me. It has.

Today I avoided a near calamity in the kitchen—the calamity of not knowing for sure what to have for lunch. At breakfast time (and by breakfast I mean my two helpings of coffee), I was thinking I’d have a salad for lunch. And yes, I do consider lunch that early in the morning.

Then at 10am, I spied that last ball of pizza dough in the fridge. Pizza for lunch. My fave. But … there’s the salad. And gosh darn it, that pizza dough is sitting there, asking me to redeem myself for a not-so-great pizza making session last night.

Salad.

Pizza.

Salad … on a pizza? Salad pizza! Why not, right? Why not, indeed.

I’ve had arugula pizzas at fun, fancy pizza joints before. So I felt comfortable enough throwing something together despite my lack of arugula. Here’s what I eventually made, using 1/2 of one ball of pizza dough.

Since my new convection oven tops off at just 450F (a minimum of 480F is what I prefer for pizza), I baked the dough naked for 8 minutes, knowing I’d want my salad topping in the oven for just a minute. After 8 minutes, I took out the base and applied:
-pesto
-baby spinach/young greens with thinly sliced red onion and red pepper, lightly dressed with a balsamic vinaigrette
-leftover sauteed shrimp (pre-heated while the naked dough cooked)
-goat cheese

Sneak it back into the oven for just a minute more. Sprinkle with kosher salt and pepper.

Delicious. It was so good, it’s gone.

Zucchini Tomato Mozzarella Sliders

Zucchini. It doesn’t stop.

Turn around for a minute and the long green veggie is 3 inches longer on the vine. Not kidding. Hold off on picking it for a day and … well … it becomes a billy club. Growing up, we’d throw the very large zukes into the pig pen. Healthy, zucchini-loving pigs, that’s what we had.

Lately, thoughts during my 25-minute walk back home from yoga have turned to how to use that day’s zucchini. Pizza. Pasta. Salad. I’ve done them all and wanted something different. Last night, my craving for a burger—really, the craving for something meaty between two bready buns—decided dinner for me. Why should sliders be reserved for meat eaters? Zucchini can play that game, too.

1 5-6 in. zucchini
2 tbs olive oil
1+tbs balsamic vinegar
1 spring oregano
kosher salt and freshly ground pepper
6 small French rolls, cut into top and bottom halves
2 cloves garlic, peeled
1-2 tbs olive oil
1 deliciously red heirloom tomato
mozzarella

1. Slice zucchini into rounds slightly thicker than 1/2 in. Discard (or eat!) the smaller rounds. Shoot for using 12 rounds.

2. Combine oil, vinegar, oregano, a big pinch of kosher salt and several turns of the pepper grinder in a medium bowl. Dip your finger in there and adjust seasoning if you’d like (more vinegar? more oil? It’s your food—make it taste the way you like!). Add zucchini slices and toss. Put aside.

3. Smash those garlic cloves with the back of your chef’s knife (on a cutting board, of course) and schmear it together until the garlic becomes kinda pasty. You can add a sprinkle of salt or not. Add this to a small bowl of 1-2 tbs olive oil. Brush this oil onto the bun halves.

4. Set a grill pan onto medium-high heat. When it’s hot, place buns, cut side down, onto the pan and flatten slightly. 10-15 seconds will do. Put grilled buns into a bowl and cover with a tea towel for now. Turn off grill pan.

5. Meanwhile … we’re still waiting for the zucchini to marinate a bit. Take this time to make a small side salad and whip up a quick vinaigrette.

6. Okay, done with the salad? Time to move on. Get that grill pan back up to medium high. Place your zucchini rounds onto the grill pan. Using a brush, dab some of the liquid remaining in the bowl onto each slice. Let them sit for 4-5 min, or until they get some nice-looking grill marks on the bottom.

7. While those are grilling, slice the tomato into 6 slices and add to whatever liquid remains in the bottom of that bowl.

8. Mozzarella. Time to slice it. Slice it about 1/4 in. thick or less, and into whatever size will sit nicely on top of a zucchini round.

9. Back to those zucchinis. They should be ready to flip onto the other side. Do that. Then place a bit of mozzarella on top of each. Let them grill for a minute.

10. Get your buns ready, working with one top and bottom at a time. This part is optional: Make some room in that grill pan and place the buns cut side down into the goodness the zucchini has been cooking in. Only takes a second, and remove quickly. If not doing that: Place one zucchini slice onto the bun bottom, and overlap a second on top of that. Add a slice of tomato. Top it off with other half of the bun. Repeat with the remaining zukes and buns.

Super. Good. I ate one and a half. Coulda had two. Or three.

Cilantro Pesto

Pesto makes me happy. It just does. Just like the pop of a champagne bottle means something celebratory is about to happen, the knowledge that pesto is in a dish means something tasty is about to be experienced.

Basil is just the tip of the pesto iceberg. It’s the easy and expected version. But when the garden presents one with an abundance of other herbs, it’s a prime opportunity to explore other pesto flavors. That’s how this batch of cilantro pesto came about. A 3-ft. row of cilantro plants was beginning to bolt (i.e. grow quickly and produce flowers), and rather than let it go to seed, I opted to harvest it all. And what’s the best way to use large amounts of herbs? Pesto.

Like anything with cilantro, this pesto goes pretty darn well with Mexican food. It’s also tasty spread inside a grilled cheese and as a base for a pizza. And the best thing about this version is … it’s accidentally vegan.

  • 1 cup loosely packed cilantro leaves (and I also threw in the flowers)
  • 1 cup loosely packed parsley leaves
  • 1/3 cup whole almonds
  • 1 small fresh chili (jalapeno is good)
  • 2 garlic cloves coarsely chopped
  • 2 tbs fresh lime juice (I used a whole lime)
  • 1/4 cup vegetable oil
  • salt and pepper to taste

-Place all ingredients except lime juice and oil in a food processor and pulse several times to chop finely.
-With the foodpro on, add the juice and oil in a steady stream. If you like your pesto saucy, add a bit more oil.

All my pesto recipes come from the The Moosewood Kitchen Garden cook-garden book. The dill pesto recipe is also a keeper. I’ll share, but first my dill needs to grow a bit more.

Tofu Marinade

Tofu. Exciting stuff.

Exciting stuff that you most likely stay away from. Am I right? “Meh, whatever. I’ll have the chicken,” is what you’re saying.

The best tofu I’ve ever eaten was takeout from this hole-in-the-wall Chinese place in Ithaca, New York, about 18 years ago. It was a bit spicy with a shockingly crisp texture. No idea what they did to it but I can still remember how tasty it was.

While trolling the Web in search of what to do with tofu, I came across a fabulous marinade. And by fabulous I mean I had all the ingredients on hand and it was super-simple to make. The recipe has been on a Post-It Note on the fridge for about 8 months now, and before I lose it down that mysterious gap between the icebox and the counter, I thought I’d post it to Dainty for safekeeping.

Okay, so … you marinate this tofu baby. Then what? The cooked marinated tofu slabs go well with an Asian-style slaw. Put both in a wrap or on top of brown rice. A little added soy sauce is a good addition for the latter, as well.

Ingredients*
1 tbs balsamic vinegar
1 tbs sesame oil
1 tsp agave nectar
1 tbs minced ginger (a heaping tsp of ground ginger works, too, and gives it a tiny bit sweeter flavor)
1 tbs minced garlic
1/2 tsp cumin
1/2 tsp coriander
1/4-1/2 tsp cayenne

*This recipe easily doubles BUT think twice before doubling the cayenne. A double recipe will more than adequately cover a standard block of tofu cut into 1/4-inch slices.

-Combine all ingredients in a tall-sided container and whir up with a hand-held immersion blender. Or, put in a regular blender. Blending isn’t totally necessary, but I feel it gives the marinade more body than just a simple whisking. It then holds onto the tofu better.

-Brush overtop 1/4-in. tofu slices, and the sides, too, if you wish. You may have extra marinade – keep that around to pour on top of your wrap or tofu rice bowl.

-Let sit in the refrigerator for an hour or two. Then place slices bottom-side down in a medium-hot pan. Flip after 3 minutes. Flip again after three minutes—this helps get the marinade onto the side that wasn’t brushed.

We used the marinated tofu in a brown rice bowl along with a raw corn-cabbage slaw and some leftover sauteed mushrooms that we reheated in the same pan used to cook the tofu. A sprinkle of nama shoyu or regular soy sauce gave the dish a nice pop.

Cocktail: Cucumber Cape Codder

I’m not a cocktail maker. And I’m certainly not a cocktail drinker. When I do drink them, it gets sloppy fast if there is more than one. I’m the girl in the corner with the beer or wine—that’s typically a much better option for me.

Someone who does love her cocktails is Martha Stewart. And when I say Martha, I mean the corporate entity that is Martha (I’m not privy to Martha’s personal drinking habits, sorry). Martha will, on occasion, publish some very tasty cocktail suggestions. There’s one that Jennifer and I have actually named The Martha Stewart—it’s a tequila, ruby red grapefruit and lime juice concoction that’s too delicious. Then there was the coconut margarita from years back—way delicious.

Our latest Martha Stewart cocktail discovery is the Cucumber Cape Codder. Cucumber and cranberries—not a combination you’d see even on the Thanksgiving table, but it’s one that certainly works in a cocktail glass.

Cucumbers have that “refreshing” quality, hence why ladies put them on their eyelids while sipping cucumber water in spas. But let the cucumber simmer in a simple syrup and add ice and vodka — well, that’s real refreshment.

Let’s not ignore the fact that this cocktail is damned beautiful, too. Just look at it!

Cucumber Cape Codder

Ingredients
1 cup sugar
1 cup water
2 cups grated English cucumber, plus thick slices for garnish
9 oz. vodka, chilled (isn’t it always chilled?)
12 oz. non-sweetened cranberry juice
1/2 cup lime juice (about 4 limes)
ice

-Bring sugar and water to a boil. Turn down to simmer and stir until sugar dissolves.
-Remove from heat and stir in the grated cucumber. Let it cool.
-Once cool, strain through a fine sieve into a bowl or container, and discard the solids.
-Combine the cucumber syrup, vodka, cranberry and lime in a 2-qt. pitcher.
-To serve, pour over ice and cock that cucumber slice on the glass for a touch of fanciness.

I’m thinking Fridays might become Martha Stewart Cocktail Day. That’ll definitely be a good thing.

Technically once the flowers bloom, there should be potatoes under the ground. But I want them bigger than peas, so I’ll await awhile.

And it’s highly energy efficient and will have solar panels and is built like a German tank – and that’s with good reason. Obviously, more on this later.

Sweet potato, goat cheese and rosemary-sage pizza

The following is a paraphrased and nearly completely inaccurate account of a recent text conversation.

Text from Nan: J’s sick, can’t use tix to tonight’s show at Club Passim. Can you use them?

Text from Dainty: Uh … wha? Tonite? Sure! Who’s playing, where’s it?

Nan: Meg Hutchison. She’s great. H Sq.

Dainty: We’re in! Coming after Baptiste yoga, could eat a cow. Do they have food?

Nan: Veggie Planet serves their food. Order Henry’s Dinner. On a pizza. Trust me.

Jennifer and I do indeed trust Nan—she’s a lawyer, after all, and we love her. We go to Club Passim, ravenous, and after a cursory glance at the menu, immediately ordered the Henry’s Dinner, pizza version. Something about sweet potato, goat cheese, asiago, rosemary and sage—oh, don’t forget the caramelized onions—all atop a whole wheat pizza.

First thought: Um … yeah. It’s really good. Things that should come together as a side dish at Turkey Time turns out to be a great topping for a pizza.

Second thought: I could totally make that.

And I did Here’s my version.

Ingredients:

  • 2 pizza doughs from the Biga-Based Pizza Dough recipe (which makes a total of four)
  • 1 large sweet potato
  • 1 sweet onion
  • olive oil
  • balsamic vinegar
  • fresh rosemary and sage, ground in a spice mill together, about 2 tbs each
  • a log of goat cheese
  • asiago cheese (we used parmesan)
  • salt and pepper go without saying …

-We had a gigantic sweet potato, so we spiked it with a few holes and popped it into a 425F oven for nearly an hour. After 45 min you want to keep poking a fork in it to see if it’s done all the way through. When done, let it cool enough to handle. The skin will just peel right off with your hands. Slice it into 1/4-1/2 inch think rounds.

-While the potato is cooking, slice up that sweet onion. Add about 2 tbs olive oil to your trusty large skillet, set on medium high, and toss the onion in there. Add maybe 2 tbs balsamic vinegar. Sprinkle generously with kosher salt. Toss often. After a bit you’ll want to turn the heat down low and let it saute low and slow. Half hour, maybe. Give the onions a taste halfway through – you might want to add more balsamic to your liking. When they’re done, let them cool, too.

-Heat the oven to 480F. Got a pizza stone? You need one, seriously.

-When you’re ready, flour your counter and roll out that pizza dough – thin but not super super thin. Sprinkle a pizza peel with fine corn meal and lay that dough on there.

-Next, brush the dough surface with some olive oil. Now you can arrange your ingredients however you want. I put the caramelized onions on the bottom. Next I layer with sweet potato – I broke my potato slices into chunks and spread them out a bit. Same with the goat cheese – I just broke chunks off the log and applied liberally. Next, a generous dusting of the rosemary-sage mixture, followed by Parmesan cheese. Salt and pepper on top.

-Slide the pizza onto the stone. 6-7 minutes is all you need. You should have enough ingredients for two pizzas, so while the first one is cooking, get the second one all set to go.

Jennifer just took the leftovers for lunch and popped it into the break room toaster oven. A colleague asked, “Hey, is that the Henry’s Dinner pizza from Veggie Planet?” Looks like I got it right.

Jennifer’s Ode to a Clam (Chowder)

What we have here is a guest post. My first guest – awesome! And it’s from none other than the best chef I know personally—my dear wife, Jennifer. She’s the real cook in the Dainty household. Who needs a recipe? Not her, not really. Today’s topic  happens to be one of those recipe-less recipes that she just developed from experience. You eat enough chowder, you’re gonna know how to make it eventually.

So, without further ado, here’s Jennifer’s brilliant rendition of clam chowder.

Ode to a clam. Yes, I said clam. Many of you out there have an aversion to shellfish, which are easy to ruin in unskilled hands. Perish the thought. I know one former Eastern Long Island resident (editor’s note: That would be me) who had such an aversion, until she was able to experience what shellfish cooked well tastes like … manna from heaven. Well, actually the sea—the sweet, briny, bountiful sea.

Inspired by photos posted by dear friends who did some late-winter clamming, I suddenly remembered the quart-sized pouch of clams frozen in our freezer; harvested New Year’s weekend during an unseasonably warm morning outing in the flats of Provincetown Harbor.  I had frozen the clams along with the liquor they produced, waiting for the right moment to make a chowder. Not your typical Monday night meal, and it only took moments to whip up!

-I thawed out 4 cups of clam broth and 2 cups of fish fumet

-Diced into 1 inch cubes 3 potatoes

-I cooked the potatoes in the clam liquor along with 2 bay leaves for seasoning. While the potatoes were cooking I sautéed up a mirepoix (fancy way of saying celery, carrot and onion).

-2 medium carrots

-2 celery stalks

-1 large onion

-Once the veggies were mostly soft I added 4 oz. of shitake mushrooms. I had them in the fridge, and thought, why not?!

-When the potatoes were done (15 minutes or so), I used an immersion blender to break down the potatoes, but not completely. I wanted to leave some chunks, but also give the illusion of some cream in the broth, so I let my starch be the cream substitute. To the pot I added my cooked veggies and the quart plus of clams, warmed the mixture through and wished I had some crusty bread to serve along with it.

Man, oh man that was good!  Thank you P & J for inspiring me to bust out the bounty harvested a few months ago. Food-inspired memories!
